Makes: 8–10
Ingredients:
- 2 eggs
- ¼ cup coconut flour
- ¼ cup peanut butter (no added sugar)
- ⅓ cup raw cacao powder
- ¼ cup raw honey
- 1 tbsp chia seeds
- ¼ cup + 1 tbsp almond milk
- ⅓ cup dark chocolate (85%), broken into pieces
- pinch of sea salt
- ½ cup raspberries
- 1 tsp baking powder
Method:
- Preheat the oven to 180°C.
- Beat the eggs.
- Stir in the cacao and coconut flour until combined.
- Add the peanut butter, honey, chia seeds and almond milk and mix.
- Add chopped dark chocolate & raspberries.
- Spoon the mixture into the baking tin.
- Can top with swirls of extra peanut butter.
- Bake for 25–30 minutes in the oven.
- Remove from the oven, allow to cool and then cut into brownie squares.
- Serve warm 🙂
