This is a quick, healthy vegetarian lunch.
Combine 1/4 cup mixed onions, 1 tablespoon Dijon mustard, 1 teaspoon ground cumin, 1/2 teaspoon paprika, black pepper, salt, 1 can chickpeas, 1 slice whole wheat bread, 1 large egg and 1 large egg white in a food processor until well blended.
Heat olive oil in a large nonstick pan over medium heat. Spoon a tablespoon chickpea mixture per patty into pan; cook four minutes on each side or until golden brown.
Serve with a salad, or serve in a pita. Add one pita to each pita half and serve with a creamy yogurt dressing or tzatziki.
