Planning is a key factor when it comes to healthy living. I’m a big fan of cooking a bit extra each time – so I can have the same meal again tomorrow or re-use some of the ingredients in a different meal.

Today’s recipe is one of those re-used meals. The previous recipe I put on the blog, was Falafel balls and salad. So what I did was to mash up my left-over Falafel balls and mix it with Health Nook’s preservative-free, homemade mayonnaise, spooned out the mixture on a fresh salad and drizzled it with olive oil, for a well balanced, delicious meal.
