Ingredients

2 eggs

¼ cup milk (I use soya or coconut)

1 ripe banana (mashed)

1 cup gluten-free rolled oats (grind to a flour)

½ tsp baking powder

1 tbsp chia seeds

½ tsp Himalayan salt

1 tsp cinnamon

Coconut oil (for frying)

Method

Whisk eggs & milk together and then mix in the mashed banana. In a separate bowl, combine the oat flour, baking powder, chia seeds, salt & cinnamon. Add the wet ingredients to the dry mixture & stir.

Melt coconut oil in a pan & add 2 tbsp of the mixture to the pan, cooking each side until golden.
